Easy Pesto Pasta
One of favorite things to do everyday is COOK. And recently I've started planning my meals for the week and going grocery shopping according to my recipes. Today was suppose to be my cook free day but I couldn't resist the urge to make something. So I decided to whip up something quick and easy. So here we go. I would like to make a disclaimer :I never use measuring cups or spoons for recipes unless I am baking, I usually just eye ball everything, so I apologize in advance, this is a close measurement to what I used.
Just look at how yummy is will be!
Easy Pesto Pasta
1 Box of Fettuccine Pasta or what ever
pasta you like
2 Tablespoons of Olive Oil
1 Tablespoon of butter
1 Teaspoon Onion Powder
1 1/2 Tablespoon Pesto
1 Cup of fresh or frozen Spinach (not pictured)
1/2 Cup of Tomato Diced
1 Clove of Minced Garlic
1/4 Cup of diced Onions
A Sprinkle of Parmesan cheese for topping
*Salt & Pepper to taste
Optional Ciabatta Bread
In a medium sized pot, fill it half way with water and add 1 tablespoon of the olive oil. Turn the heat on medium and let the water come to a boil, once it boils place pasta in boiling water until tender.
In a separate medium sized pan, put in the other 1 tablespoon of olive oil and butter and turn the heat to medium. Place the diced onion in the pan and let it simmer until almost translucent. Then place the diced tomatoes in the pan and slightly stir. Let the onion, tomato mixture simmer for about 4-5 minutes. Next place the spinach and minced garlic in the pan and slightly stir. Add the onion power, salt and pepper and turn heat to low.
Once the pasta is finished cooking DO NOT DRAIN IT. Dump the pasta and pasta water in to the pan with the onions and tomatoes and mix well with a spoon or fork. Lastly take the pesto and add it to the pasta and mix well. Serve your pasta in a bowl with parmesan cheese on top and TA DAAAAA LUNCH!
If you love bread like I do try this recipe with ciabatta bread on the side. Heat a ribbed skillet or if you don't have that any pan is fine. Place about 1/2 tablespoon of butter in the pan and turn the heat on medium-low. Slice the ciabatta in medium slices and once the butter is melted place the bread in the pan, for about 30 seconds on each side. YOU'LL LOVE IT!!!!
